Pumpkin Cheesecake Monkey Bread

Pumpkin cheesecake? Good. Monkey bread? Yum. Both in one dish? Delish! This recipe courtesy of our friends over at Pillsbury.

Ingredients:
1/2 cup granulated sugar
2 tablespoons pumpkin pie spice
4 cans (7.5 oz each) Pillsbury® refrigerated buttermilk biscuits (sold in a 4-pack)
1 cup packed brown sugar
1/2 cup butter
1/3 cup canned pumpkin (not pumpkin pie mix)
3 oz cream cheese

Directions:

  1. Heat oven to 350°F. Spray 6-cup fluted tube cake pan with cooking spray.
  2. In large food-storage plastic bag, mix granulated sugar and pumpkin pie spice.
  3. Separate each can of dough into 10 biscuits. Cut each biscuit into quarters, adding biscuit pieces to bag and shaking as you go. When pieces are coated, arrange in pan. (If you run out of mixture, remove dough pieces from bag and add 1 to 2 more tablespoons granulated sugar to bag.)
  4. In 1-quart saucepan, heat brown sugar, butter, pumpkin and cream cheese over medium heat, stirring occasionally, until butter is melted. Beat mixture with whisk until mostly smooth (there may be some tiny pieces of cream cheese, but that’s okay). Pour mixture over biscuit pieces in pan. Place pan on cookie sheet to catch any spills.
  5. Bake 30 to 35 minutes or until golden brown. Cool in pan 2 minutes. Place heatproof plate upside down over pan; turn plate and pan over. Remove pan. Cool 10 to 15 minutes before serving. Store in refrigerator.

Note:
This recipe requires plain canned pumpkin puree – Not pumpkin pie mix, which is a complete pie filling with spices added. Double check that you purchase the correct one! The pumpkin pie mix won’t yield the same results.

The cooling time is important! The pumpkin mixture gets very hot in the oven, and you don’t want to burn your mouth.

Shortening Jeans While Keeping The Original Hem

Finding that perfect pair of jeans is even harder when you’re short like me. (I’m 5’0″) The petite sections leave a lot to be desired, and not all jeans offer “short” sizing.

A few weeks ago, I found the PERFECT pair of jeans – They fit like a glove, looked great, and they were on sale! The only problem was that they were way too long for me.

I figured I could just roll them up, but honestly I hated the way they looked when rolled up. Just as I was about to return them, I came across this tutorial showing you a great way to hem jeans at Make-it and Love-it.

Since I can’t sew to save my life, I’m going to show this to my Grandmother and see if she can do it for me. People who’ve tried this says they’ve turned out great, and you can’t even tell that they’re hemmed!

Worst case scenario, I can just rip the stitches out if I don’t like the way they turn out. 🙂

Review: Incipio SILICRYLIC Hard Shell Case

I recently got a new smartphone (Samsung Focus 2), and I needed to find a case to keep it safe. I have a bad habit of dropping things, and this phone’s smooth exterior made me nervous.

Unfortunately, my case options were limited. There are literally THOUSANDS of cases for my husband’s iPhone, but most case manufacturers don’t bother with phones that will be gone tomorrow.

In the end, I ended up buying an Incipio SILICRYLIC Hard Shell Case with Silicone Core, in a wonderful purple/gray color. At $29.99, it’s not the cheapest thing out there, but I liked how it was designed. The case features a silicone core for shock absorption, and a rigid shell to ward against dents and scratches.

‘The Lucky One’ Is One Great Chick Flick

The other night, I went up to Redbox and rented The Lucky One with Zac Efron. I had wanted to see it when it first came out in theaters back in April, but things kept falling through and eventually it was too late.

Since the Hubby was out of town last week, I decided to finally rent it. And let me tell you, it was worth the wait!

The Lucky One has the perfect mix of romance and drama, the classic recipe for a chick flick. I’m a sucker for the romance, and Zac Efron is freaking hot (and he’s a pretty good actor), so I was sold right off the bat.

His co-star Taylor Schilling was also really good in the movie. I saw her last year in Atlas Shrugged: Part 1, which is another great movie you should check out!
